Guardian Turret
Turrets do not walk and do not fly. They are Guardian cannons fixed to walls and rooftops, and most of the live ones are inside Hyrule Castle. The beam is the same weapon. The difference is that you choose the corner you peek from.
Peek, parry, or spend the arrow
An ancient arrow to the eye is still a one-shot. Use it on a turret that covers a staircase you cannot afford to dance on. Everywhere else, the parry is the better trade: the reflected beam kills it, and you keep the ancient arrow for a Stalker on the castle approach.
The beam has the same charge windup as a Stalker's. Step out of cover when the eye lights, raise the shield, and parry as the shot leaves the barrel. If you are early, you are still behind the wall. If you are late, the wall is why you were not in the open.
When you have to break it the slow way
Without ancient arrows and without a parry you trust, bomb arrows into the eye from behind a pillar will eventually break it. It has more health than a decayed shell, so do not walk into the lane and trade swings. The Master Sword still does extra damage to it, once you can stand in range.
Loot is the usual ancient pile: screws, springs, gears, and a chance at a shaft or core. Mark the turret on the map the first time you die to it. Castle routes get shorter when you already know which balcony is shooting.
