Evermean
An Evermean stands in the woods and does nothing until you walk under it. Then the arms close. It is not a Talus and it is not a treant you climb. The compendium lists a mixed pile instead of a monster part: Korok fronds, three kinds of rhino beetle, chickaloo tree nuts, acorns, a sturdy stick, a hightail lizard, a golden apple, and monster extract.

Do not walk under the canopy
The still tree with a face in the bark is the monster. Shoot it from outside the branches. If you are already grabbed, swing before the squeeze finishes, or you eat the hit and drop what was in your hands. A fire arrow into the trunk is enough to start the fight without stepping in.
They are written into the Great Hyrule Forest and Hyrule Field. A real tree does not turn when you circle it. If the trunk turns, stop walking closer. Bomb flowers work, but they also scatter the drop into the grass, so look before you leave.
What the pile is for
There is no horn to fuse for attack. Monster extract is the cooking item in the pile. Beetles and the lizard are elixir parts. The stick is a weapon base if you are empty-handed. A golden apple is food. None of these replace a Bokoblin horn on a sword.
Because the drop is a grab-bag, do not go out of your way for an Evermean when you are hunting a specific gem or a specific horn. Kill the one that is already pretending to be the tree on your path, take the pile, and keep walking. The Blood Moon puts that tree back.
