Stone Talus
A Stone Talus is a pile of rock that stands up when you walk near the ore. The ore deposit on the body is the only weak point. Climb on and hit it with a hammer, a two-handed swing, or Yunobo's roll. Igneo Taluses burn you until you cool them. Frost Taluses have to be thawed. Rare ones drop diamonds.

Get onto the ore
It stands, then it throws an arm or sits on you. Both are reasons to stay at the side until it pauses. Climb the body, not the arm it is about to throw, and swing at the ore. A blunt fuse such as a Moblin horn, a Lynel hoof or a rock breaks the ore faster than a sword. When the ore shatters, the body collapses and you pick up flint, amber and the gems for that type.
A Battle Talus has a platform of Bokoblins on top. Clear them with an arrow or ignore them and climb straight to the ore if you can take a hit. The ore is still the only thing that kills it. Igneo Taluses in Eldin need Sidon's water, a splash fruit, or an opal-fused weapon to cool the body before the climb. Frost Taluses need a fire fruit or a fire weapon to melt the ice, then you climb as usual.
Which gems, and when to come back
Plain Taluses drop amber, opal and sometimes a ruby or sapphire. Igneo ones lean toward rubies. Frost ones lean toward sapphires. Luminous and rare Taluses are the diamond trips, and they sit in specific spots rather than every hillside. Mark a rare one. A Blood Moon puts the ore back, which is a steadier gem route than hoping a chest rerolls.
Yunobo's roll breaks ore from the front if the deposit faces you, which saves the climb on a hot Talus you have only half cooled. Do not roll him into the lava. Pebblits around a Talus are small and optional; they interrupt the climb if you leave them hopping. One bomb clears the little ones before you start the giant.
